I like to make Jollof rice because it tastes good. I like to add chicken or fish to my Jollof rice. I add Maggi cube to make it sweet.
2 cups of jollof rice
Add tomatoes
Add diced red pepper and parsley to taste
Add Salt and bay leaf
Vegetable Oil
1/2 lbs. chicken and chicken gizzards
1 tsp curry
Cut the meat in twenty pieces. Add to the pan onions, salt, curry and chicken spices. Then cook till tender – 30 minutes or so. Then take the chicken out of the pan. Leave the pan on the stove add oil and cook 1 minute. Then add the meat to fry – for 4-5 minutes to brown. Then put it on a separate plate.
Boil the water in a separate pan, add the rice to cook. Let the rice cook for 20 minutes, then remove the water, separating it. Blend tomatoes, onions, and peppers together, putting them on a separate plate. Slice half of the onion, put it on a separate plate. Put the pot on the stove and add 1/4 cup of oil, cook until hot – 5 seconds. Then add onions, add 1/2 tsp of salt. Cook them for like a minute. Add the blended tomatoes, peppers & onions mixture together. Add 2-3 cups of water, then add the rice. Add the curry and cover to cook for 20-30 minutes.
